n8n Workflow for Email & PDF Processing

We're looking to automate a process for handling invoices received as PDF attachments in Google emails using n8n. The workflow should monitor a Google inbox for new emails with PDF attachments, download them, and then parse the PDF to extract key information such as invoice number, company name, contact person, and phone number. The extracted data should be appended to an Excel spreadsheet, and a summary email should be generated and sent out.

Requirements: Experience with n8n, PDF parsing, and Google Sheets.
